Sun-Dried Tomato & Artichoke Spaghetti w/ Pine Nuts & Breadcrumbs in White Wine Sauce 🙋🌿

Just call me the pasta queen over here this week 😂🎉 At least this one was from last week 😉 My friend Ronni @veganvida23 inspired me to cook up a spaghetti dish that’s delicious at room temperature. .
INGREDIENTS 🌿🌿🍅🌿
1/2 lb. spaghetti
1/4 cup olive oil
1 shallot finely chopped
4 garlic cloves minced
1 cup dry white wine
1 tsp dried basil
1 tsp dried oregano
1 tsp kosher salt
1/2 tsp pepper
1 cup packed @californiasundry sun-dried tomatoes (jarred marinated, drained well)
1 cup chopped artichoke hearts (jarred marinated, drained well)
Juice of 1 lemon
1/4 cup seasoned panko
1/4 cup pine nuts
3 T fresh basil, thinly sliced

Cook pasta in salted water. Meanwhile, in a large pan add oil, shallot, garlic and cook until tender, careful not to burn. Add wine, salt, pepper and dried oregano and basil, and cook lightly bubbly until reduced by half. Meanwhile, toast panko and pine nuts in a dry pan until lightly browned, stirring every few minutes, careful not to burn. Add tomatoes and artichokes to the pan, drained pasta, and lemon juice. Stir and serve, sprinkle with panko, fresh basil and pine nuts, and gently toss.🍅🌿🍅🌿
