So I went to see the doctor for the first time in months today because of my sore throat that hasn’t improved in a week despite my huge intake of water, water, and water. 😅 the doctor said I have tonsillitis and it was pretty surprising that I didn’t get any fever because some people usually get it because of the pain. So props to my strong immune system that’s also from my intake of fruits, veggies, and other amazing plant foods. This is why I really believe in eating well. 🌱 hope you’re all doing well! And to my fellow Filipinos who are also experiencing crazy weather changes (from extreme heat to sudden downpours of rain)—eat lots of fruits, veggies, stay hydrated, and get lots of rest! 🤗
Sweet potato cashew cream
1/2 cup + 1 tbsp cashews, soaked overnight
1/2 cup water (add more or less depending on desired thickness)
1/3 cup mashed sweet potato
2 tbsp nutritional yeast
Juice from 1/2 lemon
1 tsp salt, or to taste —add everything into a blender and process until smooth!
