SPICY SHRIMP “CHEESY” (Gouda) OLIVE FLATBREAD. So delicious! This dough was so EASY…gluten free and can be dairy free (see recipe below). This meal took 25 minutes from start to finish. I chopped up @haveanoliveday Spanish manzanilla stuffed with pimento olives and added them to the top of the dough before cooking and it added an amazing flavor! Topped with some dairy free Gouda cheese, chopped veggies and these spicy shrimp. Probably the best dinner I’ve made in a while! Happy Thursday loves! Deets: Flatbread: 1 cup gluten free flour (with xantham gum), 1 cup Greek style yogurt (dairy or dairy-free), 1 tablespoon flax, 1 egg white, 1/4 teaspoon salt, 1 teaspoon oregano, 1 teaspoon minced garlic, 1/4 cup chopped @haveanoliveday manzanilla stuffed with pimento olives. Mix all dry ingredients in a bowl, then add yogurt and egg white and mix into a dough. Spread a little flour on a baking sheet and create a flatbread crust. Spread the chopped olives over the top. Brush the top with egg wash (whisked egg) or olive oil and bake for 20 minutes on 400. While cooking, chop veggies and sauté shrimp (I seasoned mine with paprika, harissa and coconut aminos and sautéed in olive oil for two minutes per side). Remove from oven, add cheese (I used dairy free Gouda) *IT SHOULD MELT RIGHT AWAY), chopped red onions, chopped tomatoes, more chopped olives, chopped avocado and spicy sautéed shrimp. Garnish with parsley. •
