Spicy mushrooms ragu with linguine – anyone wants a bite??
Sharing a super easy pasta dish that you can make for any meal of the day! Used cremini mushrooms and mashed tofu for the texture. Seasoned with thyme and flavored with tomato paste and veggie broth and kicked it up with some?️. How simple is that? .
~ 1 package of cremini mushrooms, chopped and reserved some as sliced for presentation
~ 1/2 block of firm tofu, drained and mashed
~ 1 small onion, minced
~ 4 cloves, minced
~ 3-4 tablespoons tomato paste (used @muirglen)
~ 1/4 teaspoons dried thyme
~ salt to taste
~ 2 teaspoons sriracha or any spicy sauce
~ 1/2 cup veggie broth
~ Linguine pasta of your choice (@wholefoods brand)
~ blistered tomatoes to garnish .
Cook pasta based on package instructions. If you are using tomatoes, start to blister them in an oven.
In a heated nonstick pan (no oil), lightly pan fry mashed tofu until golden brown (keep stirring), set aside. Using the same pan, sweat mushrooms with 1 teaspoon oil and set aside. In another pan with 2 teaspoons oil, saute garlic and onion until soft, stir in tomato paste, sriracha, veggie broth, and thyme. Let simmer for 1 minute and add tofu and mushrooms. Season with salt if needed. Add pasta of your choice and give it a quick stir. Serve warm with blistered tomatoes.
