SPICED CAULIFLOWER NOURISH BOWL WITH GARLIC SUNFLOWER SEED DRIZZLE✨I’ve had a few people message me recently saying they’re allergic to sesame seeds and asking for a nourish bowl topping alternative to tahini- I got you ??.
This bowl is a spin on my classic nourish bowl with the addition of garlicy spiced cauliflower + this creamy sunflower dressing ? Sunflower seeds are my secret weapon when it comes to plant-based eating. I love cashews as much as the next person, but they can be SO expensive. Because of this, I tend to sub in sunflower seeds for most recipes that call for cashews and it works like a dream! Fun fact- sunflower seeds are also high in magnesium, iron and protein ✨.
To make ??:
Cube sweet potato and cut cauliflower into florets. Drain and rinse a can of chickpeas. Toss all together in a bowl with 1 tbsp garlic powder, 1/2 tbsp smoked paprika and a pinch of salt. Roast at 450 F for 25 mins. Meanwhile, blend together 1/2 cup sunflower seeds, 1/4 cup nutritional yeast, the juice of 1 lemon, 1 tsp maple syrup, a pinch of salt + 1 clove of garlic. Add enough water to blend smooth. Once veggies are done, massage some kale with lemon juice or apple cider vinegar (to help break down the fibers and improve digestion), add the rest of ingredients together, drizzle with sunflower dressing + enjoy! ?
