Soba Noodles w/ Ginger-Sriracha Tahini Sauce & Steamed Veggies???

A creamy and satisfying #meatlessmonday dish that is ready so fast! You can use any veggies you have on hand, and it’s great warm or cold too. Plus, there’s no need to cook the sauce, so all you need is a bowl to whisk it ??

I try to always have soba or udon or oragnic rice noodles, or let’s be honest, ANY type of noodle around the house. It’s one of my comfort foods, but also one that is fast, loved by the family (let’s avoid those beloved kid food battles for one night!), and easy to customize with whatever additions you want or have in the fridge. ???

For pasta, you can get chickpea or lentil varieties to increase the protein, which usually makes it a more filling meal for me ??

Steamed veggies: I used corn, peas and cauliflower, about 3/4 cup each, but adjust to your liking.
1/2 package soba noodles, cooked according to package directions and rinsed in warm water. Drain thoroughly, and add a small amount of oil if desired, to prevent sticking while you’re preparing other ingredients.
Sauce: whisk together the following, and garnish with red onion, chili flakes and lime ➡
1/4 cup low sodium soy sauce
1/4 cup tahini
1.5 T rice wine vinegar
1 T agave
1/2 to 1 T sriracha
1 T sweet chili sauce
1/2 tsp ground ginger
1 minced garlic clove
