So it’s 89?degrees Fahrenheit in NYC today, the perfect time for a pot pie ?(NOT). I had a sh*t load of 3 bean chili in the fridge that I batch cooked on Monday. I rolled it over into a cornbread pot pie (not my idea), all thanks to the genius @minimalistbaker cookbook ?Topped with maple syrup, melted vegan butter, and some cilantro. To be fair, I made this yummy dish last night for tonight’s supper #latergram , ’cause no way I’m turning on the oven up in this heat. Seen here, reheated in the microwave, and soon to be demolished ?
