Shells with sheet-pan roasted vegetables for this chilly, blustery evening to warm the bones! ??? Been away for a few days to focus on big sis getting married and to catch up on, well, everything! Getting back to normalcy, and back into the kitchen. This is a huge pasta shell shape, and so good for catching ALL of the delicious sauce. ???

For the vegetables, I combined diced eggplant, red bell pepper and asparagus all together on a sheet pan in the oven until tender (about 25 minutes on 375 degrees Fahrenheit), having drizzled them with olive oil and seasoned heavily with kosher salt, pepper, and garlic powder. ?

Meanwhile, made a sauce of 1/2 diced sauteed onion in a couple tablespoons olive oil, 1 28 oz. can crushed tomato, dried basil and oregano, 1-2 teaspoons kosher salt (depending on your tastebuds), minced garlic and pepper to taste. ?

Then with your pasta too, mix it alllll up with capers and kalamata olives (if you dig these flavors) and top with minced parsley. Enjoy! ???
