Sharing some noods ? What’s your favorite way to cook noodles? This is a bowl filled with some stir-fried sweet tamarind noodles using some goodies from @7grainspantry! I shared this recipe a little while back and sharing it again below!

Now please excuse me as I go back to reading my book—I’m really enjoying my down time after school while I still can since the workload’s been pretty manageable still ?

Stir-fried sweet tamarind noodles
__
100 g dry noodles of choice (I used @7grainspantry’s edamame + soybean pasta)
Veggies of choice
Tofu (optional)

Sauce:
1/8 cup tamarind paste/purée (I used @7grainspantry’s tamarind purée ??)
1/8 cup liquid aminos/soy sauce (I used @7grainpantry’s skinny seasoning)
2 tbsp coconut sugar
1 tbsp water
1 tbsp sesame oil + additional 1 tbsp for cooking
1 tbsp salt, or to taste

1. In a bowl, mix all he ingredients for the sauce.
2. Half cook the noodles. Drain once cooked.
3. Heat a pan. Add in 1 tbsp sesame oil and sauté the veggies and tofu (if using). Once tender, add in the noodles and the sauce. Add the salt to taste.
4. Cook for a few more minutes until the noodles absorb the sauce and are cooked. Enjoy while hot!
