Sharing a favorite quick and delicious side dish! ?? Roasted asparagus, cherry tomatoes, and sliced mushrooms. You know those dishes that cook themselves? The ones with basically no work involved whatsoever? These are the best on a busy or weary evening! With plenty of seasoning and herbs, this hits the spot! If you are not a fan of tomatoes or shrooms, omit and it will be just as delicious! Just don’t omit all three ? ?? I love that this can bake while preparing the rest of the meal ??

Pre-heat your oven to 375 degrees fahrenheit. On a lined baking tray, lay down trimmed asparagus, cherry tomatoes, and sliced mushrooms. Sprinkle over some olive oil if desired. Season with salt, pepper, garlic powder, oregano and basil. Bake for about 15 to 20 minutes uncovered until asparagus is tender and tomatoes begin to split. Add fresh basil or rosemary and a generous squeeze of lemon juice prior to serving. ??
