How was everyone’s Monday? I’ve been loving the recent perspectives about Mondays that I’ve seen on instagram lately, where it’s more focus on using Monday as a positive restart, and a place of opportunity and resilience. I am totally down with adopting this perspective! How about you? ❤🍃

Using the deliciously versatile Sesame Tahini Dressing from @dressitupdressing and let me tell you, it goes perfectly with these salad flavors! I tried to add some of the beautiful leafy greens from @bright_farms and fresh mint, with cucumbers, diced red bell pepper, toasted walnuts, sliced almonds, and red onion. The fresh mint goes SO well with these other flavors 😍 BUT add whichever fresh herbs you have on hand, because trust me, it will be delicious! 🍃🌈🌟
