Happy 🐫day, my Insta friends🤗. I made this dish yesterday for dinner using my mushrooms fries recipe. Instead of dipping in just chili sauce, I decided to make a quick sesame soy glaze to go with it.😉

Recipe (serves 2-3)
√Sauce ingredients: ~ 3/4 cup water
~ 2 tablespoons soy sauce
~ 1 tablespoon pure cane sugar
~ 2 teaspoons sesame oil
Whisk above together in a bowl and set aside.

√Mushrooms fries ingredients:
~ 1 package of King Oyster Mushrooms (plus few more small ones) – cleaned with a damp towel and cut into stick shapes
~ Aquafaba – chickpeas liquid
~ Panko breadcrumbs – substitute with gluten-free breadcrumbs if needed
~ 3/4 cup of rice flour
~ 3 tbsp tapioca flour
~ 1/8 tsp salt and dash of white pepper
~ Oil for brushing

Mix flours in a bowl with salt and white pepper, set aside. Place aquafaba and breadcrumbs on separate plates. Preheat oven to 475F and brush a sheet pan with oil, set aside.
Dip mushrooms in this sequence: aquafaba -> flour -> aquafaba -> breadcrumbs.
Place mushrooms on sheet pan, brush oil on each 🍄 and bake for 12-13mins. Then, flip each 🍄 and bake for another 12-13mins, turn broiler to low, broil for another 5mins.

√Other ingredients:
~ 1/2 small onion, diced
~ 3 cloves garlic, sliced
~ 1/2 cup of cubed bell peppers
.
In a heated pan with 1 tablespoon oil, sauté garlic, onion and bell peppers until soft. Then, add sauce ingredients and cook until mixture thickens, about 2 minutes. Stir in all mushrooms fries and coat well. Serve with brown rice and a side of cucumbers.
