Roasted Red Pepper Cauliflower Pita with Hummus & the most delicious tahini sauce 🌈🍃🌟

Since I saw the bakers on The Great British Baking Show making pitas, I’ve been wanting one ever since! 😂 Used @josephspitabread
pitas, so soft and tasty. These are flavorful and easy, and the recipe is below! 🌟🍃

Red Pepper Sauce: blend 1 cup roasted red peppers + 1/2 cup sun-dried tomato (drained of oil) + 1/2 t each kosher salt, chili powder and pepper, 1/4 t cumin, 1 t lime juice (or lemon), 1 t maple syrup, dash of cayenne. 🍃💃

Hummus: 1 drained and rinsed can chickpeas, 2 T olive oil, 1 medium garlic clove minced, 2 T water, 1 t kosher salt, juice of 1/2 lemon (or whole lemon if you like).🍃🌟

Tahini Sauce: 1/4 cup pourable tahini, 1/2 t each cumin and kosher salt, juice of 1 lime, 2 T water, 1 t maple syrup, 1 T finely chopped red onion. Whisk together. 🍃🌟
.
Drizzle 2 cups cauliflower (I used frozen) and 1/2 can drained rinsed chickpeas with oil and sprinkle with salt, pepper and cumin. Roast at 400 degrees for 20 minutes, turning halfway. Add red pepper sauce to cauliflower after cauli cools. 🍃🌟

Layer hummus, leafy lettuce, cauli, extra red onion, cucumber, roasted chickpeas inside the pita. Drizzle with generous amounts of tahini sauce! 🍃💃
