Quinoa with Spinach, Tomato and Cannellini Beans with lots and lots of garlic ???? This is a great meatless Monday option and is FULL of all the garlicky and savory tomato flavors ? What would YOU pair with this? I am thinking some sweet potato fries and grilled spicy tofu ???

In a large pan…sautee 1 pint cherry tomatoes in 2 T olive oil with 4 to 6 finely sliced garlic cloves on medium low heat, covered, for about 10 minutes until tomatoes start to split. Add 1.5 cups cannellini beans, 2.5 packed cups baby spinach, and 2 cups cooked quinoa. Add 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon dried basil and 1/2 teaspoon dried oregano. Cook on low for another 5 minutes or just until spinach wilted. Sprinkle with red chili flakes if you’re feeling spicy ??
