Probably one of the best grilled meals I’ve had in a while. GRILLED CHICKEN with GREEN HERB SALSA marinade and STRAWBERRY FETA ZOODLE SALAD with BALSAMIC-YOGURT DRESSING! Happy Thursday loves! Hope you’re all having a fabulous week. My best friend is coming over tonight and we’re going to grill! Thinking this meal might just need to happen again. Grilled this chicken the other night on my @webergrills grill and used the @weberigrill iGrill2 thermometer again, and the chicken came out so juicy! Love that it connects to my phone and alerts me when the food is ready! I made one of the chicken recipes from the Weber’s Ultimate Grilling Cookbook and then paired it with this delicious zoodle salad. Deets: zoodles, strawberries, goats feta (or dairy free feta), fresh basil and dressing (1 tablespoon balsamic reduction and 1/3 cup almond milk yogurt mixed with a little water and salt/pepper), avocado covered in hemp seeds and 4 chicken breasts marinated in this salsa (1 cup parsley, 1/2 cup cilantro, 1/2 cup mint, 2 garlic cloves, 1 small jalapeño stemmed, 1 tablespoon red wine vinegar, 1 tablespoon lemon juice, 1 teaspoon lemon zest, 3/4 teaspoon salt, 1/2 cup olive oil processed in a food processor).
