Pad Kee Mao ‘Drunken noodles’, anyone??
Happy Saturday, friends. Sharing another dish that I love to order at Thai restaurant with all the no’s – no oyster sauce & no fish sauce?
I found some fresh flat rice noodle at the store & decided to give this dish a try plus I have lots of basil?. It’s soo good and I love that it’s not as sweet compared to what I ordered.??
Recipe (serves 2-3)
~ 1lb fresh flat rice noodles (microwave for 2 mins until soft, and separate noodles to loosen them up)
~ 1 cup broccoli florets, 1/2 cup sliced red bell pepper, 2 ?, wedged
~ 1 cup sliced fried tofu or pan fry firm tofu
~ 1/2 cup packed Thai basil, 2 chopped chili
~ 2 shallots, 3 cloves garlic, both sliced
~ 1 teaspoon grated ginger
~ oil and salt to taste
Sauce (whisk all in a bowl until sugar dissolves):
~ 2 tablespoons dark soy sauce
~ 2 tablespoons soy sauce/tamari
~ 3 tablespoons ‘fish’ sauce
~ 1 tablespoon stir fry sauce
~ 2 teaspoons brown sugar/coconut sugar
~ 1/4 cup hot water
~ dash of white pepper
In a heated pan with 3 teaspoons oil, sauté ginger, shallots, and garlic until fragrant.
Add in tofu, broccoli, red bell pepper, ? and rice noodles along with sauce. Stir continuously so noodles are coated with sauce & cook for 2 minutes (keep tossing around).
Then stir in basil, chili and season with salt if needed. Serve warm with some lime juice.
