Nothing BEETS a big bowl of pasta! Except when you add some BEET GREENS PESTO and SPICY SHRIMP! 🙃 Happy FRIDAY loves! Flashing it back today to this bowl, because BEET SEASON is here and if you’re looking for something to make with those green tips, here it is! Life has been hectic and I will be straightforward, I’ve had one of the most emotionally challenging week I’ve had in a while. Sincerely looking forward to a couple days off this weekend. Deets: Spicy shrimp (tossed in a little olive oil, lots of @primalpalate new bae seasoning, cayenne, salt and pepper, then baked on parchment paper for about 10 minutes). Plus, arugula, roasted tomatoes, olives, chickpea pasta and beet greens pesto topped with some of my homemade dairy free ricotta. Pesto: 4 cups of beet greens (stems removed), handful of herbs (I use basil/cilantro typically), 1 tablespoon lemon juice, 1/4 olive oil, pinch of red pepper flakes, 1/4 pine nuts, 1/2 teaspoon lemon zest, 1/2 teaspoon salt, 3 cloves of garlic. Blend or process until smooth! I used my @mealthy hand blender. •
