Happy Thursday everyone!! Needing a super flavorful and fast comfort food bowl? This is a great option that works well for work / school lunches and easy dinners, that you can make in advance! Customize with the veggies you have on hand. The sauce is tasty with whatever noodle or veggie it smothers 👍. The sauce makes about 2 servings🙋🍜

Sweet & Spicy Peanut Sauce:
Whisk together
1/4 cup smooth natural peanut butter
1/4 cup water
1 T low-sodium soy sauce
1 t rice vinegar
2 T chili garlic sauce
1/8 teaspoon kosher salt
1/2 teaspoon garlic powder
2 T agave

Soba noodles
Sliced tomato
Chickpeas
Chopped peanuts
Crunchy bell peppers
Cilantro
Crispy tofu

Crispy tofu method: drain and press a block of tofu with towel. Slice tofu into small chunks, sprinkle with salt and garlic powder, and brown a few sides in a large pan over medium heat, a few minutes per side. Be gentle as you turn the pieces, to avoid breaking. Top with extra peanut sauce. 🌿🍃🌿🍃
