Happy Thursday everyone!! Needing a super flavorful and fast comfort food bowl? This is a great option that works well for work / school lunches and easy dinners, that you can make in advance! Customize with the veggies you have on hand. The sauce is tasty with whatever noodle or veggie it smothers ?. The sauce makes about 2 servings??

Sweet & Spicy Peanut Sauce:
Whisk together
1/4 cup smooth natural peanut butter
1/4 cup water
1 T low-sodium soy sauce
1 t rice vinegar
2 T chili garlic sauce
1/8 teaspoon kosher salt
1/2 teaspoon garlic powder
2 T agave
Soba noodles
Sliced tomato
Chickpeas
Chopped peanuts
Crunchy bell peppers
Cilantro
Crispy tofu
Crispy tofu method: drain and press a block of tofu with towel. Slice tofu into small chunks, sprinkle with salt and garlic powder, and brown a few sides in a large pan over medium heat, a few minutes per side. Be gentle as you turn the pieces, to avoid breaking. Top with extra peanut sauce. ????
