New recipe: Lentil Meatball & Mashed Potato Stuffed Bell Peppers ✨ Okay so I love stuffing bell peppers (especially large ones) and baking them to perfection until they become juicy and release a ton of flavour! I stuffed these bell peppers with a lentil meatball filling and some mashed potato for a really satisfying and comforting meal. We don’t celebrate Thanksgiving in the Philippines but I believe this is a perfect main to serve for the Thanksgiving and other upcoming festivities. You can of course use the filling recipe and stuff them in other vegetables like squash if you’d prefer a heartier vegetable!
PS. I used these peppers that I brought back from Canada that were 3 weeks when by the time I used them and they were still so fresh ?
