(New recipe below!) A super easy sweet sesame mushroom stir-fry! ? managed to whip this up in roughly 10 minutes before leaving for school (and even got to quickly shoot it!). Plus how timely is it that I’m also working on my thesis which is on mushrooms?! ? anyway, check out the recipe below! Hope you guys enjoy this! Sweet Sesame Mushroom Stir Fry

Sauce:
1/8 cup + 1/2 tbsp soy sauce
3 1/2 tbsp water
1 1/2-2 tbsp coconut sugar, adjust according to desired sweetness
1 tbsp corn starch + 1 tbsp water, mixed together

Around 4 cups fresh mushroom (I used button and oyster mushrooms)—feel free to use any mushrooms of choice! You can also use canned ones
1 tbsp cooking oil of choice
1 tbsp sesame oil
1 small onion
Onion leeks, optional
1/2 cup fresh bok choy, sliced
Sesame seeds

1. Mix the sauce ingredients. Mix well to ensure the cornstarch doesn’t leave any lumps. Set aside.
2. Heat a non-stick pan. When hot, add in the cooking oil and sauté the onions and chopped onion leeks (if using).
3. Once cooked, add in the mushrooms and bok choy. Sauté for 3-5 minutes on medium high heat.
4. Add in the sauce mixture. Mix until thick then turn off heat. Add in the sesame oil and sesame seeds. Enjoy!
