Nameko, shiitake and oyster mushrooms sauteed in pesto bianco (savory lardo spread), topped with pea shoots, chili pepper flakes and a couple fried eggs.

Melt and brown about 1 Tbsp. of lardo spread (can substitute with duck fat, bacon fat or butter), toss in about 1 lb. of sliced/torn wild mushroom mix. Saute until wilted and golden in some spots. Serve with minced parsley, microgreens or pea shoots, a squeeze of lemon, fried egg for extra protein.
