Miso-broiled sea bream (orata) fillet with sauteed garlicky dandelion greens.

Mix equal amounts of mirin, cooking rice wine, sugar and a bit more of miso in a small saucepan, heat on low and slowly whisk until everything is combined. Let cool.

Marinade any thin fish fillet (less than an inch thick) of your choice for 30 mins-1 hour. Typically 1 lb. of fish will feed two people. Before broiling, scrape off extra marinade, oil a sheet pan or oven-proof skillet, and lay fish on. Put under the broiler for about 4-5 minutes, check occasionally. When the fish flakes easily, it’s done. Carefully remove skillet or pan from oven. Serve fish with greens and lots of rice. Sauteed dandelion greens: heat oil or duck fat or butter on medium-high heat, throw in some minced garlic, stir for 30 secs until fragrant, then toss in washed dandelion greens and sauteed until wilted. Sprinkle on a little lemon. The greens are pleasantly bitter and super good for you.
