?️ Meatless meatballs chickpeas curry

I have a wonderful opportunity to develop a recipe for the upcoming Earth Day event: ???? ? ????????? ????? ??? ‘?????-??’ ????? ?? ???? ???? ????? ???????????, ?????-????? ???????? ?????? ??????? organized by @gardein & @meatlessmonday using Gardein products.

Recipe
Ingredients:
~ 1 package of Gardein meatless meatballs
~ 1 small onion, 3 shallots, 6 cloves garlic, 2 slices ginger – blend into a paste
~ 1 can chickpeas, drained and rinsed
~ 5 fresh tomatoes, wedged
~ 2 tablespoons @miyokoscreamery butter
~ 2 tablespoons tomato paste
~ 1 tablespoon raw cashew, soaked in hot water for 20minutes/overnight
~ 1 tablespoon curry powder
~ 1/2 tablespoon coriander powder
~ 1 teaspoon Harissa chili pepper paste (optional)
~ 1/4 teaspoon turmeric powder
~ 2 cups veggie stock
~ 2 tablespoons avocado oil
~ salt and pepper to taste

In a heated pan with 2 tablespoons avocado oil, sauté onion, shallots, garlic & ginger until fragrant, about 1 minute. Then, add ?, cashews and cook until tomatoes’ skin start to break up. Turn heat off and blend mixture into a thick sauce using a blender. Pour mixture back into the pan and add all the remaining ingredients in, except butter, season with salt and pepper, and give it a quick stir until well combined. Place lid over, bring to boil, and let simmer on low-medium heat for another 15 minutes. Stir in butter for a creamy texture & serve warm with your favorite grain. I added saffron on my white rice – oh soo yum!??
