I got you covered ✨ This Mediterranean inspire quinoa bowl takes ~25 mins total to prep and will keep you nourished for the week ahead 🙌🏼 I also love it because all the prepped components (quinoa, sweet potato + roasted chickpeas) can be used in other ways throughout the week, too! 🌿.
To make 👇🏼:
Dice a large sweet potato and place in a large bowl with a can of drained and rinsed chickpeas. Toss with 1 tsp each of garlic powder, onion powder + dried oregano. Roast at 450 F for 25 mins or until sweet potato is fork tender. Meanwhile, cook a pot of quinoa as per package instructions. While that’s cooking, you could prep your own hummus (recipe a few posts back) or just use store- bought like I did! Chop whatever veggies you like- I love celery, thinly sliced beets, arugula + kalamata olives. Once all components are done, assemble and enjoy! You can also keep all components separate and throw them together day-of 💛
