Loaded Okonomiyaki – Japanese savory pancakes with ramen, who wants to join me?? Sending positive vibes on Tuesday with some savory pancakes?
Has anyone watched StreetFood on @netflix ?There are so many amazing share from different countries & one of them is Japan (my ?). Thus this dish was created and I paired it with ramen – oh my, best combo ever?! Just wished I have those teppanyaki grill?
Recipe
Okonomiyaki Ingredients (makes 4)
~ 2-3 cups of shredded veggies (Chinese cabbage, purple cabbage, carrots)
?Batter: Mix together 1 cup of all purpose flour, 1/2 teaspoon salt, 1/4 teaspoon baking powder, 3/4 cup homemade kombu dashi/ice cold water, 2 teaspoons mirin, & 6 tablespoons chickpea water until well combined.
✔️Take 1/2 cup of batter and mix with some veggies. In a heated non stick pan with 1/2 teaspoon oil, pour in mixture, and spread it out evenly, making a 6inch circle. Pan fry each side until thoroughly cooked by pressing each side lightly with a spatula.
?Simple sauce:
~ Mix 3 tablespoons of @annieshomegrown BBQ sauce with 1 teaspoon of rice vinegar until well combined
~ Vegan mayo
?For my ramen, cook based on package instruction and I just simply stir fry it with a little oil, leftover veggies from above and season with soy sauce.
To serve, place stir fried ramen on a plate, and top with 1 pancake. Slather with sauces, top with handful of chopped scallions, toasted nori sheets and sesame seeds.
