Lifesaving 5-minute (or even less!) Curry Fried Rice ?—and by lifesaving I mean, this recipe has saved me throughout college. It’s something I can easily whip up before heading off using just 1 pan and a few really basic ingredients. I get asked really often if I always prepare my food for school and yes, I prepared my food everyday when I went to school. I had to wake up earlier than usual to prepare and cook and on days when I just really didn’t have as much time to spare, fried rice was a lifesaver and a go-to.

Here’s the super easy recipe:

CURRY FRIED RICE
Good for 1-2 servings

2 cups cooked rice
1 tbsp sesame oil
1 tbsp curry powder
1 tbsp diced onions or onion leeks
2 cloves garlic, minced 
1/2 to 1 tsp salt (adjust depending on desired taste)
Sesame seeds for topping. 
1 tbsp soy sauce or liquid aminos —
Vegetables (this part is really up to you!) 1 cup corn, peas, and carrots mix (I used a frozen mix)
Spring onion, for topping (though really, this was just for the photo haha)

1. In a pan, heat the sesame oil. 
2. Add in the onions and sauté until tender. Add in the garlic and sauté as well. 
3. Add in the vegetables and cook until tender. 
4. Add in the rice, soy sauce, and curry powder. Mix well. Season to taste. Enjoy while hot!
