?Kidney Beans in spiced tomato sauce?This recipe is super easy to whip up and ever so satisfying?. ?I’m not sure if I told you guys but I took a course in Transcendental Meditation over the summer and I’ve seen a lot of growth in myself since I began the practice. This has been a special week for me. I’ve had so many powerful realizations about things in my personal life that have been weighing me down for years. I worked really hard to address them and to be fearless about it. I welcomed vulnerability and even enjoyed it. I feel lighter and happier.?TM is proving to be more effective than I anticipated. ?Recipe: Cook 2 tsp mustard seeds + 1 tbsp cumin seeds in a little neutral oil in saucepan over medium-low heat until aromatic (but not burnt), about 1 minute. Add 1 small red onion (diced) and 4 garlic cloves (minced) and cook on low heat until onions soften and start to change color. Add 1-15oz can whole tomatoes with juice and mash tomatoes a little while cooking, about 7-10 minutes. Transfer to blender and blend until smooth. Return to saucepan and add 1 cup vegetable broth and 2-15oz cans kidney beans or beans of choice. Simmer uncovered about 15 minutes. Mash some of the beans with side of a spatula or potato masher to thicken the sauce a little while simmering. Add salt and pepper to taste.
