To make 👇🏼:
Slice potatoes across, leaving a few millimeters between each slice. Brush on olive oil and top with salt, pepper + garlic powder. Cook at 450 for 25 minutes. Meanwhile, whisk together 1 tbsp vegan mayo, 1/8 tsp garlic powder + the juice of 1/2 lemon. Serve together + enjoy! 💛
