In the mood for something SPICY? 😁 Heres today’s Spicy Buffalo Sandwich with sriracha mayo, and oh goodness, this was GOOD. Will be posting to the blog soon, but the super easy recipe is below! You can make this with a variety of proteins, and it really hit the spot for craving an indulgent sandwich or takeout! Enjoy your night, friends ⭐🍁🌙

Slice up 1 block of extra firm tofu, season with salt, pepper and garlic powder… and cook in a grill pan (or saute works too!) until golden brown and crispy on both sides, about 5 to 7 min per side on medium heat. Let cool a bit, and toss in buffalo sauce. A lot or a little depending on your taste 😁😳

Meanwhile, saute 1 sliced onion and 8 oz. pack of mushrooms in 1 T olive oil, after a few minutes, add in 1 teaspoon each salt, chili powder, cumin, and 1/2 teaspoon garlic powder and pepper…stir frequently for about 10 minutes, adding in a bit of water if getting too dry 👍

Mix 2 T vegan mayonnaise like @followyourheart vegenaise with squeeze lemon juice, sprinkle garlic powder, and 1-2 teaspoons sriracha depending on your spicy love level. 🌱

Get 6 bread slices. Assemble 3 sandwiches by placing arugula on the bottom slice. Add 1/3 of the veggie mixture, top with 1/3 of the tofu, and spread the top slice with 1/3 of the spicy mayo. Enjoy! 🌱🙌😁
