I don’t know where I’d be in life without frozen veggies ✨🙌🏼 I’m all for relying on fresh, in season produce, but it’s well-established that frozen provides just as many nutrients (maybe even more!), is more cost effective, and is easier to keep on hand (especially if you’re cooking for one!) than fresh. I pretty much always have frozen broccoli, berries and edamame on hand when I need to throw a meal together in a pinch. I’ve even seen cooked-then-frozen beans, which would make this meal even easier 🙌🏼 Do you rely on frozen produce? If so, what’s your favourite?! 💛.
To make 👇🏼:
Cook brown rice and lentils as per package instructions (I use half veggie stock as a replacement for water to make them even tastier). Meanwhile, microwave or cook frozen broccoli and any other veggies of choice- I opted for kale and mushrooms. Once all components are done, combine and drizzle with tahini + lemon ✨
