Hump Day Bowling! Curried cashew and shrimp vermicelli noodles…Super easy and super yummy. Happy Wednesday all. It’s been a hectic couple days. I finally did a smoothie tutorial this morning in my stories so check it out if you’re interested. Enjoying this bowl before I get back to work. How’s your week going?



Deets: Sauce: 3 tablespoons coconut aminos, 2 tablespoons water, 1 tablespoon full fat coconut milk, 1 tablespoon tomato paste, 1 tablespoon sesame oil, 2 teaspoons curry powder…mixed together well. Make the noodles, and sauté the shrimp seasoned with some salt and pepper and set both aside. Then heat a skillet on medium high and add the cashews until they brown a bit. Then remove and toss with some sauce. Toss noodles with some sauce and brush the shrimp with some as well. Serve with some sautéed asparagus, sautéed red peppers, greens. •
