Homemade Mac & Veggie Cheeze: Heyyyy, you might notice I look a little different here on my account- new camera & backdrop. Pretty excited to move forward, learn new things & express myself. So here’s my recipe for Mac & Veggie Cheeze- it’s oil free, nut free, & of course animal free & full of super plant powers-??✌??
What you need: 1 box of pasta, 1 cup cauliflower cut in small florets, 1 cup sweet potatoes diced, 2 garlic cloves, 1/4 cup hemp hearts, 3/4 cup water, 3 tbl nutritional yeast, 2 tsp tomato paste, 2 tsp lemon, 1/2 tsp smoked paprika,1 tsp salt, pepper to taste
What you do:
1️⃣ Cook pasta according to directions, reserving 1/2 cup pasta water before draining
2️⃣Steam cauli, potatoes, & garlic 7-8 min
3️⃣Using a high speed blender, blend steamed ingredients & hemp while slowly adding water. Blend on low, increasing speed until all water is incorporated. Add the rest of the ingredients until smooth 3 min
4️⃣Add desired amount of sauce to pasta, used reserved pasta water to evenly coat if needed. I mixed my bowl with more veggies, coconut bacon, fresh herbs, and hot pepper flakes.
This recipe makes about 2 cups of sauce, also great on roasted veggies and nachos.
