HOMEMADE GRANOLA ✨ Okay, okay, I know for those of us based in Canada it’s far from smoothie bowl season… but the heart wants what it wants (even though it’s snowing today 😅). No matter the season, I always find myself craving a nice cold smoothie after a weekend long run, and topping it with this granola never disappoints. I made something super similar today after an 11 miler in the snow and it totally hit the spot 🙌🏼 Do you crave smoothies in the winter too, or am I alone in that? 🙃.
Mix 1 cup of rolled oats, 1/2 cup sunflower seeds, 1/3 cup of pumpkin seeds, 1/2 cup coconut flakes, 2 tbsp tahini, 1 tbsp maple syrup, 1 tsp cinnamon + 1 tsp ground ginger in a bowl until combined. Spread flat on a lined baking tray and cook at 375 F for 20 mins or until golden brown, mixing every ~5 mins to cook evenly. Use as a cereal or to top smoothie bowls or plant-based yogurt!
