Homemade Chickpea Pasta ?????Hey my friends!! Hope all is well. So how about some homemade chickpea pasta using just 4 ingredients? I know these guys look a bit like gnocchi, hence the name “Gnocchetti” but the only thing that makes it similar to the dumpling is it’s shape. It was pretty exciting making this dish cause I used my high speed blender to turn my dried chickpeas into flour ?? but no worries if you don’t have a high speed blender you can easily find chickpea flour at your grocery store. So anyway on to the recipe: What you need: 1 1/2 cups semolina flour (250g) 1 1/2 cup Chickpea flour ( 135g) – store bought/ or make your own in a higher speed blender using dried chickpeas, 3/4 cup water, 1 tbls flaky salt
1️⃣ On stovetop, bring water/salt to a boil, then set aside
2️⃣ In a food processor, Combine chickpea & semolina flour, process on high, slowly add hot water 2 tbl at a time, scraping down sides when needed. When combined it will form a ball & feel smooth, taking about 4 min. If pasta ball feels too sticky, add a bit more flour. If you don’t have a food processor you can knead the dough until smooth for about 10 min. Wrap in kitchen towel/plastic wrap, and let rest 30min.
3️⃣ After dough has rested. Clear a work surface. Cut ball into 8 equal pieces. Roll piece into a long rope about 1 1/2 cm thick Then cut rope into 1 1/2 cm pieces.
4️⃣ To form pasta shape: with the cut side pasta of closest to you, use the sharp edge of a butter knife blade, drag it across the pasta away from your body while keeping knife horizontal to pasta. The pasta will curl up from dragging the knife & form the gnochetti shape. I used a gnocchi board to get the ridges, but it’s not necessary. Check out my stories soon for the visuals. Then place pasta on parchment lined paper. Repeat steps 3-4 until you have used all your dough
5️⃣ Cook pasta in salted boiling water 6-8 minutes. Drain & add pasta to your favorite sauce. I served mine with a classic basil and pine nut vegan pesto. Enjoy!! ?
