I entered this tasty and super easy dish into the #hhrecipecontest recently, and now I am craving soba again. Does that happen to you, just find yourself reminiscing about dishes past? ?? It cooks up so fast and I love the texture for hot or cold noodle dishes. ?? Sweet & Garlicky Eggplant Noodles ??

INGREDIENTS:
1/2 package soba noodles
1 bell pepper chopped
1 T toasted sesame oil
1/2 large eggplant cut in rounds 1cm thick
2 tsp minced garlic
Sauce:
1/3 cup low sodium soy sauce
1 T rice vinegar
1 T agave
2 T sweet chili sauce
1-2 teaspoons sriracha
1/2 teaspoon onion powder
1 teaspoon cornstarch or flour + 2 teaspoons water
Garnish:
1/4 cup sliced green onion
Red chili flakes
Chopped cashews or peanuts
DIRECTIONS
Cook noodles, rinse in cold water, drain. In a bowl, mix cornstarch and water. Add remaining sauce ingredients and whisk. Meanwhile, saute or grill (I used grill pan) eggplant over medium heat with some oil spread over them and sprinkle of salt on both sides. When browned on both sides, about 5 to 7 min each side (careful not to burn), let them cool slightly and cut into chunks. In a large pan, saute red bell pepper in toasted sesame oil, about 5 minutes until tender then add garlic. Cook another minute. Add sauce mixture and cook over medium heat for two to three min until thickened, stirring occasionally. Add eggplant and noodles, gently stir. Serve and top with garnishes.??
