Hi Friends! Sharing a Grilled Corn & Chickpea Slaw 🌿🍃

Spotted some delicious looking ears of corn at the grocery store, and had to do it grilled. This slaw is great for cookouts, family gatherings, or just whenever you’re in the mood for some fresh crunchy goodness 🌿👍🌽🍅

INGREDIENTS:
1 8 oz. package rainbow slaw (carrot, broccoli, red cabbage)
3 ears of corn, boiled for 5 min
Garlic powder
3/4 pint cherry tomatoes sliced in half
2 T minced red onion
1 can chickpeas drained and rinsed
1/2 cup green olives sliced in half
Dressing:
1/3 cup olive oil
1/2 T dijon mustard
3 T balsamic vinegar
1/2 tsp kosher salt
1/2 tsp pepper
1 T agave

DIRECTIONS:
Drizzle boiled corn with oil, brush oil around, and sprinkle with salt, garlic powder and pepper. Grill or if cooking in grill pan, do about 3 to 5 min per side on 3 sides over medium hear. Cut corn off ears, once cool enough to handle. In large bowl, combine dressing ingredients and whisk together. Add all other ingredients to bowl, and gently toss to combine. 🌿🍃🌿🍃
