?Hi Friends. How’s your weekend so far? It’s a gorgeous day here?. Started the day with these vegan tzatziki rye toasts. A great savory breakfast or snack. I used my melon-baller to make cucumber rounds and cut them in half for topping. So much fun! Enjoy the rest of your weekend.?.

?Recipe vegan tzatziki: Ingredients: 1 unpeeled cucumber, finely grated + 1c plant yogurt + 1c cashews (soaked 2-3 hours) + 3 minced garlic cloves + 1/4c finely chopped fresh dill + 1 tsp lime zest + 2 tbsp lemon juice + salt to taste + few turns black pepper. Method: Transfer grated cucumber to paper towels and squeeze out excess moisture. Blend all ingredients until smooth. Spread on some toast and top with melon-balled cucumber spheres, more fresh dill and your choice of hemp seeds, fresh dill, furikake etc. .
