Here is another way to use your leftover pasta! ???This is a chickpea pasta-quinoa salad with delicious additions like roasted red peppers, corn, sunflower seeds and fresh basil with tangy red wine vinaigrette. ?? .

The vinaigrette recipe is up on my blog through the link in my bio. The rest is 1/2 cup each of cooked quinoa and @eatbanza chickpea pasta shells. Add 1/4 cup each corn, roasted red peppers, and peas. Top with a tablespoon or two of sunflower seeds and finely chopped fresh basil. If you’re a caper-lover like me, add a teaspoon or two. Drizzle with vinaigrette or your dressing of choice! ??
