Recipe (makes 20-25 small rolls)
?Ingredients:
– 20-25 sheets of rice paper (used 6” diameter)
– 1-2 tablespoons @Pompeian Smooth Extra Virgin Olive Oil
– 14oz firm tofu, pressed
?Peanut dipping sauce:
– 1/4 cup creamy salted peanut butter
– 2-3 tablespoons unsweetened plant milk
– 1 tablespoon maple syrup
– 1/2 tablespoon @Pompeian Smooth Extra Virgin Olive Oil
– juice of half lime
– crushed roasted peanuts (optional)
?Filling suggestion: Lettuce leaves, mint, cilantro, softened rice vermicelli & shredded: purple cabbage, carrot, cucumber
1. Cut tofu into 5 big slabs, drain well using paper towels.
2. Heat a non-stick pan with 1 tablespoon Pompeian Smooth Extra Virgin Olive Oil, pan-fry tofu until golden brown. Remove & cut into strips.
3. To make the peanut sauce, place peanut butter in a bowl, then add Pompeian Smooth EVOO & the rest of the dipping sauce ingredients. Whisk vigorously until well combined. Note: Add more lime juice/liquid for a thinner dipping sauce.
4. To make the spring rolls (??on stories), fill a large bowl with warm water. Take one rice paper & soak it in the water quickly. The wrapper should still be slightly firm.
5. Lay softened wrapper on a cleaned surface. Add filling ingredients in the middle, start with lettuce/vermicelli, then tofu & end with mint or cilantro. Lift the bottom edge of the rice paper & fold it over the filling. Tuck in the ingredients tightly while doing this. Bring the sides of the wrapper to the middle & roll to seal.
6. Place the prepared rolls seam side down & cover with a damp paper towel. Repeat with the remaining ingredients. Serve with peanut dipping sauce.?
