Happy Monday!? Starting the day off with a fresh herb omelette paired with grilled halloumi, avocado and baked plantains??‍♀️? .⠀
For the omelette, whisk two eggs with salt, pepper & garlic powder, chopped parsley and dill, and cooked it in a pan coated with avocado oil on low heat with the lid for a few minutes (I don’t flip the omelette). You know it’s ready when eggs aren’t runny and the top is cooked. ⠀
Baked plantains: slice into 1/4 inch coins, tossed in avocado oil and sprinkle with pink salt. Bake at 400F for 20ish min flipping halfway through?⠀
