Using my favorite #housefoods organic tofu in extra firm, this bowl is a bit sweet, a bit spicy, and is loaded with veggies and cozy noodles. Feel free to sub any veggies you have on hand! And let me know what you think ???

1/2 block organic extra firm @housefoodsamerica tofu
Oil
Salt and pepper to taste
Miso Glazed Eggplant
1 cup eggplant sliced 1/2 cm thick
Sesame oil
1/4 tsp ginger powder
1/2 tsp white miso paste
1 T soy sauce
1/2 T agave
Sauce (whisk together in small bowl)
3 T soy sauce
4 tsp agave
2 T sweet chili sauce
1 tsp sriracha
1 tsp each water and cornstarch whisked until smooth
1/2 zucchini sliced
1 bell pepper sliced
Oil
2 garlic cloves minced
2 cups cooked noodles
Cilantro (garnish optional)
Red chili flakes, sesame seeds (garnish optional)
Preheat oven to 400 degrees F. In a baking dish, place sesame oil and eggplant. Whisk other glaze ingredients together and evenly spread over eggplant. Bake for 7 minutes, gently flip, bake another 7 minutes or until golden brown, careful not to burn.
Drain tofu, pat dry, cut in wedges, and season. In a large pan with a bit of oil, cook tofu until lightly browned on each side. Transfer to plate. Add bit of oil to pan, and cook zucchini, peppers, garlic for 2 min. Add Sauce, cooked noodles and tofu, gently stir. Serve with eggplant and garnish. ????
