We plan to get outside today as much as possible, then gym and early dinner with the local BFFs from college 🌟🍃✨ .
Sharing this delicious Fajita Scramble today, perfect for brunch or any time. Everything combines soooo well, and the star of the show to pull all of the flavors together is the easy guacamole. I’m about to put it on everything 😳 .
Saute one block of organic (I used @housefoodsamerica ) extra firm tofu in a dry pan or small amount of oil, breaking it up into small chunks with generous salt and pepper and enough turmeric to turn this lovely color (start with 18 teaspoon and sprinkle on from there), stirring every few minutes. Takes about 5 to 7 minutes to start browning up a little 🍃🌟

Separately, saute 1/2 an onion sliced, and 1 bell pepper sliced in small amount of oil or water, seasoning with salt and pepper. After the first 3 minutes, add 1/4 t cumin, 1/8 t chili pepper, and 1/8 t garlic powder and cook another few minutes until tender. 🍃🌟

Guac: mash together 1 avocado, juice of 1 lime, 1/8 t each kosher salt and pepper, 1/4 cup chopped tomatoes, and 1-2 T finely chopped red onion depending on your preference 🍃🌟
