Happy FRY-DAY! Celebrating with this ONE PAN SKILLET ITALIAN POTATO, KALE and TOMATO HASH! (After vs. Before) Made this the other day and it would make a perfect brunch for the weekend. How is everyone’s week going? I spent the morning getting my physical done at the doctors (to be honest I’m not the best at doing that type of stuff ? BUT it’s over and done ✅) This hash is so freaking delicious and super easy to make. Leftovers are just as good too! Topped this off with some eggs, goat feta and avocado and damn such a tasty meal! Any big plans this weekend? I have a dance recital and a baby shower to attend so it’s going to be busy! Hoping you get outside though. •

Deets: add some ghee (I used @fourthandheart Himalayan salt ghee) or oil to a cast iron skillet and heat on medium high, then add chopped onion and sauté for about 2 minutes, reduce to medium and add chopped potatoes (I used fingerlings), salt, onion powder, garlic powder, pepper, dried thyme, dried oregano, dried basil and paprika. Stir and cover for about 5 minutes (give the potatoes a stir once or twice), then add some chopped kale, garlic and grape tomatoes and mix together, cover again for about 4-5 minutes (stirring again a couple times…tomatoes should become soft and may pop). Top with some @vitalfarms eggs, feta or dairy free cheese (or omit for #whole30) avocado and some parsley. •
