This was a simple lentil salad as a side dish or main, that I served with creamy tahini maple dressing. It would be equally delicious with a vinaigrette dressing. ???

Simply saute shredded brussel sprouts (which turn the prettiest shade of green when cooking) and brocc florets, then add shredded carrot, cooked lentils and top with fresh cilantro. During cooking, season the veggies with plenty of salt, pepper, garlic, cumin and turmeric. ?✨?
