Green Lentil and Tomato Curry! 🍃🌿🍅 This is a really satisfying and easy dish, and it pairs perfectly with steamed veggies and/or rice…of course with a bit of avocado for good measure 👍🙋

Happy Wednesday friends! Halfway through the week somehow, and counting down the days until I have some downtime this weekend (hooray for 3 day weekends! 🎉🙌). Let me know how your week is going💛💙

INGREDIENTS:
1 T oil
3/4 cup chopped red onion
3/4 cup sliced mushrooms
2 cups chopped tomatoes
1/2 tsp turmeric
1 tsp cumin
1.5 tsp curry powder
1/4 tsp cinnamon
3/4 – 1 tsp salt
1 tsp chili powder
3 cups cooked lentils (cooked mine in veggie broth instead of water)
1 can coconut milk
Chili flakes or sriracha to taste

DIRECTIONS:
Cook vegetables in oil, stirring frequently, for about 10 minutes until getting tender. Add spices, stir and cook additional 2 minutes. Add lentils and coconut milk, stir, and cook on low simmer another 10 to 15 minutes until thickened, stirring occasionally to prevent sticking. Stir in chili flakes or sriracha if desired, to add some spicy heat. 🌿🍃
