Gluten-free sweet and sour soy bites

Happy Monday, my Insta friends?. Hope everyone is doing well and off to a good start of your week.
Today, I’m sharing a dish that got me started to become a vegetarian when I was 15 – sweet and sour soy bites.

Recipe
Ingredients
~ 1 package dried soy protein chunks, soaked until soft to handle, squeeze all liquid out OR 1 package of firm tofu, cubed
~ 1/2 cup cherry tomatoes, halved
~ 1/4 cup fresh pineapple, cut into chunks or cube
~ 3 cloves garlic, sliced
~ 1 small onion, diced
Coating:
~ 1/2 cup rice flour + 2 tbsp, separated
~ 3 tbsp tapioca starch
~ 1/8 tsp salt and dash of white pepper
~ 3/4 cup water
Sauce – mix in a bowl, set aside:
~ 4 tbsp ketchup
~ 1 tbsp tamari/soy sauce
~ 1 tsp rice vinegar
~ 2 tsp maple syrup/pure cane sugar
~ 1/2 cup water
Mix flour, salt and water in a bowl, stir until well combined, add protein chunks and coat well. If the batter is too thin, add the remaining 2 tbsp of flour, if it’s thick enough, omit that. Oil a baking sheet pan and bake at 495F until cripsy, about 12-15mins, flip halfway.
In a heated pan with 2 tsp oil, sauté garlic and onion until soft, add pineapple chunks and cherry tomatoes, cook for 2 mins, stirring occasionally. Add in soy chunks and sauce, coat until well combined, season with salt if needed. *If your pineapple is not sweet enough, you may need to add more maple syrup. Serve with your favorite grain and a side of steamed veggies. Enjoy and have a great #meatlessmonday
