🌱Flavorful, no-fuss, Moong Dal with cashew yogurt 🌱This dal cooks quickly and uses ingredients you likely already have on hand. I didn’t have curry leaves so I substituted with lime zest and fresh basil. It was so flavorful. (You can increase the cumin seeds to 1 tbsp if you prefer more intense flavor.)
✅Heat some neutral flavored oil in medium saucepan. Add 2 tsp cumin seeds and cook about 30 seconds until fragrant. ✅Add 1 small chopped onion, 3 minced garlic cloves, 1-inch piece ginger (minced) and 1-2 green chilis (deseeded+minced). Sauté until onion is golden brown, stirring so garlic doesn’t burn.✅Blend 3 large vine tomatoes until purée. Add blended tomatoes to saucepan with zest of 1/2 lime (grated finely), approximately 5 chopped basil leaves, 1-1/2 tsp ground coriander, 3/4 tsp turmeric, 3/4 tsp Garam Masala, . (The lime zest and basil are to substitute for curry leaves.) Simmer 10 minutes. Add 1-1/2 cups dry moong dal and 4 cups water. Mix well and simmer until dal is cooked, about 20-25 minutes, adding more water as needed. Salt to taste. Serve with chopped fresh coriander and cashew yogurt (optional).
