🌱Fire roasted tomato chili bowl🌱roasted butternut squash, broccolini and always avo:) This is my entry to Sasha @earthlingsasha and Lenny’s @vegamelon #bowlmeaway party. You are both so awesome.💛
🌱Recipe: Sauté 1 large yellow onion (finely diced) + 1 red bell pepper (finely diced) in 2 tbsp olive oil for about 5 minutes until onion soft and translucent. Add 4 minced garlic cloves, 1 tbsp chili powder, 2 tsp ground cumin, 1 tsp paprika, 1/2 tsp ancho chili powder. Sauté another minute. Add 2 tbsp tomato paste. Sauté 30 seconds before adding 2-14oz cans fire roasted tomatoes and 1-15oz can kidney beans + 1-15oz can black beans (or 3-1/2 cups of home cooked beans). Stir to incorporate. Simmer 30 minutes. (If it gets to thick, add some of liquid from canned beans or bean cooking liquid.) Remove from heat and mix in 1/2 cup chopped pecans. Add salt to taste. .
