Fall Vibe Fries ? Baked Fries using parsnips, carrots, red potatoes, & sweet potatoes. This time, my hubby and I DID NOT share these yummies with the children. This way, I would not get grief for parsnips and the sweet potatoes ??Anyway here’s the easy and healthy recipe for the delicious fries ?:
What you need:
2 lb mix of parsnips, carrots, red potato, & sweet potatoes
1/2 cup of chopped fresh parsley
2 tsp oil ( I used grape seed), salt & pepper to taste
1️⃣ Preheat oven to 425 degrees
2️⃣Cut veggies in equal size length and width
3️⃣ Soak fries in cold water for 20min
4️⃣ Dry thoroughly and place in a bowl
5️⃣ First add oil to coat, then parsley, salt & pepper
6️⃣ Place veggies on a lined baking sheet and bake for 25-30 minutes flipping half way through. Enjoy immediately and serve with your favorite dip.
I served mine with a chipotle mayo & my parsley tahini sauce ?
I would also loveee to bring these fries to my friend Emily’s . I actually know Emily in IRL,but we initially met here on IG. She’s the coolest and nicest person, and her food constantly inspires me. Happy 5k Emily ?☺️
