Fajita bowl for two! ?✌ Or one depending on your mood ? Was in the mood for creamy and spicy goodness to celebrate Thursday ? This is totally customizeable to use whatever veggies you have! The spicy tahini sauce gives this such a yummy kick! The easy recipe is below ??

Veggies: slice 1 bell pepper, 2 celery stalks, 1.5 cups broccoli florets, 1/4 medium onion and about 3/4 cup mushrooms. Add to a large skillet with 1 teaspoon each chili powder, kosher salt, garlic powder, oregano, and cumin. And 1/4 teaspoon black pepper ? Saute them for about 8 minutes over medium heat in a couple teaspoons avocado oil or coconut oil, stirring frequently just until tender, retaining some crispness ?

Cook up some quinoa! I cooked 1 cup dry quinoa; used half for thish dish and will use other half for meals during the week! ??

Make spicy tahini sauce: 2 T tahini, 1/4 teaspoon each kosher salt and chili powder, juice of 1 lemon, 1 teaspoon hot sauce, and about 2 T water (may need another T water to thin if desired). ??

Roast your chickpeas while veggies are cookin! Place 1/2 can drained, rinsed and dry chickpeas on a baking sheet and drizzle with oil of your choice. Toss and sprinkle with a generous pinch of cumin, chili powder and kosher salt. Toss again and roast at 400 degrees Fahrenheit for 15 to 20 minutes. ??

Assembly time! Place your quinoa in a large dish and too with veggies, chickpeas, spicy tahini sauce! I served with arugula, sliced cherry tomatoes, mashed avocado and fresh cilantro! ?✌
